The Art of Wine – Hello Again

Okay, I have been out of touch for quite a while.  There has been so much going on with the restaurant I have let the blog slip off the radar.  NO MORE!!  Getting back into the swing of things in a big way.  My friend Wayne came in a couple of weeks ago and brought a bottle of 1997 Caymus Cabernet Sauvignon, Napa Valley.  What a treat!!  We decanted it, and let is open up for about 30 minutes while we ordered dinner.  Right off the bat, supple ripe cherries and blackberries on the nose.  The first sip added toasted oak and good well balanced tannin.  It was beautiful, in every since of the big California Cabs!!
